Check it out - I love beef jerky and buying it from Chris’ Specialty Meats is expensive as crap so I’ve decided that I’m going to start making beef jerky and catalog my recipe as it evolves. Dave Carner has signed up to be my official jerky critic and I bet Jamie can be conned into the dubious duty as well.
So let it begin…
My first recipe consists of:
- 3 pounds of Beef Eye of Round Roast
- 2/3 cup of Worcestershire sauce
- 2/3 cup of Soy sauce
- 1 tablespoon of salt
- 1 teaspoon of black pepper
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 tablespoon of liquid smoke
I’ve got my meat freezing right now - I’m going to get it about halfway frozen so I can slice it up into about 1/8 inch thick strips.
Update: Got it sliced and in the fridge chillin’ overnight. It goes on the dehydrator tomorrow!
