Started on the second round of Jerky today - I’ve got two marinades going now.
The first is my own brew - it’s a modified version of my last marinade. Items in bold differ from the last one.
2/3 cup of Worcestershire sauce
2/3 cup of low sodium Soy Sauce
1 teaspoon of freshly cracked black pepper

Update on the jerky - Dave sampled some of the first batch and we’ve decided that the recipe needs less salt and more oomph.
